Bread is one of the most eaten forms of food in the whole world and the Banana bread is one of the most famous varieties. Banana bread as the word implies, has bananas in it. It is usually moist, sweet and has a cake-like texture. It is considered a quick bread because it is easy and fast to prepare, just combine all the ingredients, mix them and “Viola!” it is ready to be baked. No one really knows where the banana bread originated or who invented it, but people speculate that it was created in the 18th century by housewives who were trying out the different uses of pearlash. During the 1960’s when the home baking was revived, the banana bread suddenly became very popular. It was featured in almost every cookbook because of its simplicity in preparation; it can even be baked or cooked in a Zojirushi bread machine!
Here’s a simple Banana Bread recipe that anyone can enjoy.
1 3/4 cups of all purpose flour
¾ cup of sugar (white)
1 teaspoon of baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
½ cup melted butter
3 large bananas, mashed very well
1 teaspoon vanilla extract
Oven should be preheated to 350 degrees Fahrenheit or about 180 degrees Celsius. Spread some butter and flour to baking pan and set it aside. Mix flour, sugar, baking powder, baking soda, salt, and cinnamon in a large in a large bowl and set aside. These will be the dry ingredients.
In a separate bowl, mix the melted butter, mashed bananas, eggs and vanilla. Using a rubber spatula or wooden spoon, lightly fold this mixture to the dry ingredients. Fold until the combined batter is thick. Do not over mix because this will result into hard and chewy bread. Pour mixture into the baking pan and bake until the bread is golden brown. To be sure that the bread is cooked, stick a toothpick into it and if the toothpick comes out clean, the bread is done. Let the bread cool for a while then remove it from the pan. Serve while warm to enjoy the full freshness of the bread or if you intend it to be eaten at a later time, freeze the bread. This recipe can make a loaf measuring 9 x 5 x 3 inches.
